Also a lost art, the art of fermentation. The rewild project is inspired by ancient traditional methods of preserving our food and drink and the health benefits of consuming fermented foods. We offer to share ways in which to make popular ferments such as Sauerkraut, Kimchi, Country wines and ancient herbal beers. We use wild-crafted herbs and home grown fruits and vegetables to make things and will always try to source all our produce as local and as organic as possible, because that is how we like it. And don’t forget about the good old local tradition of cider making! Community apple pressing days are a great way to bring local people together and celebrate the harvest time.
